To Wet the Appetite

This quick creamy tikka is what is says on the tin. Quick and creamy! It uses bean sprouts to add substance to the dish so you can avoid eating starchy rice with it.

Ingredients

1 Onion, Diced

1 Red Pepper, Diced

500g Bean Sprouts

4 Chicken Thighs, Diced

100g Tikka Curry Paste (Pattaks is good)

Handful of Cherry Tomatoes, Halved

300g Coconut Cream/Milk

2tbs Coriander, finely chopped

How to cook the delicious meal

  1. Stir fry the bean sprouts, onion, red pepper and chicken in a wok until cooked through
  2. Stir in the curry paste and cook until aromatic
  3. Stir in the coconut cream, tomatoes and coriander
  4. Simmer until sauce thickens
