Winter Wamer – Sausage, Bacon and Chickpea Caserole October 19, 2008

To wet the appetite

This meal is real comfort food.  Goes down nicely and has a really warm aroma to it.  You can taste the succulent bacon and sausage with the freshness of a homemade tomato paste.  Tastes better when kept in the fridge overnight and eaten the next day.

Ingredients

Brown Onion (chopped) x 1

Garlic Clove (finely chopped) x 2

Olive Oil x 2 teaspoons

Cumin x 2 teaspoons

Sausage (chopped into bitesize pieces) x 4

Bacon (chopped into strips) x 4

Tomatoes (skinned and quartered) x 5

Chesnut Mushrooms (halved) x 12

Vegetable Stock (200ml)

Chickpeas (1x tin), drained

Spinach (200g)

A handful of cashew nuts

Instructions on cooking a delicious meal:

  1. Heat the oil in a wok and when hot add the garlic, onion, cumin, sausage and bacon. Cook until onion is golden brown and meat is cooked through.
  2. Meanwhile, skin the tomato by submerging them in boiling water and peeling the skin off as it blisters.
  3. Place tomatoes, mushrooms and stock in a food processor and blend until a smooth paste
  4. Add the paste to the wok mixture along with the chickpeas
  5. Simmer for about 20 minutes until the sauce thickens
  6. Add spinach and allow to wilt
  7. Sprinkle in cashew nuts and stir into the caserole

Serve with chunky bread and propper butter!
