To wet the appetite
This meal is real comfort food. Goes down nicely and has a really warm aroma to it. You can taste the succulent bacon and sausage with the freshness of a homemade tomato paste. Tastes better when kept in the fridge overnight and eaten the next day.
Ingredients
Brown Onion (chopped) x 1
Garlic Clove (finely chopped) x 2
Olive Oil x 2 teaspoons
Cumin x 2 teaspoons
Sausage (chopped into bitesize pieces) x 4
Bacon (chopped into strips) x 4
Tomatoes (skinned and quartered) x 5
Chesnut Mushrooms (halved) x 12
Vegetable Stock (200ml)
Chickpeas (1x tin), drained
Spinach (200g)
A handful of cashew nuts
Instructions on cooking a delicious meal:
- Heat the oil in a wok and when hot add the garlic, onion, cumin, sausage and bacon. Cook until onion is golden brown and meat is cooked through.
- Meanwhile, skin the tomato by submerging them in boiling water and peeling the skin off as it blisters.
- Place tomatoes, mushrooms and stock in a food processor and blend until a smooth paste
- Add the paste to the wok mixture along with the chickpeas
- Simmer for about 20 minutes until the sauce thickens
- Add spinach and allow to wilt
- Sprinkle in cashew nuts and stir into the caserole
Serve with chunky bread and propper butter!
